A recipe for "Surprise Muffins," as written by Sylvia Sasse.
Ingredients:
Egg Milk Cooking Oil Sifted Gold Medal Flour Sugar Baking Powder Salt |
1 1 cup 1/4 2 cups 1/4 cup 3 tsp 1 tsp |
Steps:
1) Beat 1 egg slightly with a fork. 2) Stir in Milk and Cooking Oil. 3) In separate bowl, sift together dry ingredients. Add to liquid mixture. Stir just until flour is moistured. Batter should be lumpy. Do not overmix! 4) Fill muffin cups half-full with batter. 5) Drop tsp of jelly in center (a "scant amount.") 6) Add more batter to fill muffin cup 2/3 full. 7) Bake at 400 for 20-25 minutes. Makes 12 muffins. |
